About the Producer

Gaitania enjoys a favourable location because it has all the thermal floors: warm, temperate and cold, which offers great possibilities in terms of agricultural production diversification and of land use in general. This lot was sourced from 4 farms near the village of Gaitania in Planadas, Tolima; Fincas El Jardí, El Triunfo, La Florida and La Argentina.

The Process
This lot is washed in line with Colombian coffee processing traditions. Ripe cherries are de-pulped and then dry fermented for 60 hours, thoroughly washed in the fermentation tank, and then dried for 15 days in a marquesina (a specialised covered drying method common in Colombia, essentially a greenhouse-marquee).
